Whilst Hazelnut flour can be substituted for wheat flour, it can be used with wheat flour for a firmer structure. When used with wheat flour, substitute no more than 1/4 of wheat flour than is required in the recipe. As hazelnut flour and other nut flours lack the gluten which helps baked goods rise, when they are used on their own without wheat flour, the amount of leavening agent used will need to be increased.
